Our Story

For the last few years we have only dreamt of owning and bringing our vision to life with developing our very own coffee shop from the ground up. While searching for the perfect location we wanted to keep it local and be a unique business within the area. That’s when we found our home in Bannockburn, a little down the road and over the back fence… our little hidden gem was finally coming to life. Many names were brainstormed for weeks to come and we wanted to create a name that was naturally suited to the area. This is when one night we were sitting on the block at sunset, the gumtrees surrounding us were filled with cockatoos… This is when the name Early Bird Baristas came to mind… and from that moment Early Bird was born. Early Bird Baristas is a small family owned and locally operated business that believes in sourcing, brewing and serving the coffees we only dream of drinking every single day. There’s a world of flavours and aromas to be experienced in every cup and our coffee is thoughtfully produced from bean to cup. Our daily work focuses on offering a high quality and unique coffee + local food experience and we acknowledge that this feeling is only made possible by the dedication of many individuals. From the grower back at origin to the roaster based in Melbourne to the grinders in Bannockburn, every tiny part of our beans journey counts.
